BRAND INTRODUCTION
Kaganoi Brewery, founded in 1650 in Niigata Prefecture, Japan, originally served as the official sake supplier to the Maeda family of the Kaga Domain, presenting sake as tribute to successive feudal lords. The brewery's site was once the Itoigawa base of the Kaga Domain, known as "Kaga Hyakumangoku." In December 2016, a devastating fire in Itoigawa destroyed the entire brewery, forcing production to halt. Brewing resumed in spring 2018 after the new facility was completed and continues to this day.
The new brewery embraces the philosophy that "brewing is nurturing, staying true to fundamental techniques," while leveraging modern equipment to optimize brewing with medium-hard water. Believing that "tanrei (light and clean) does not mean bland or thin, but pure and clear flavor," Kaganoi strives to refine its craft and deliver exceptional sake for the future.
