Zuiyo Co., Ltd., established in 1867 in Kumamoto, Japan, carries on the region's sake-brewing heritage with a commitment to traditional ginjo craftsmanship. Using classic Kumamoto yeast and underground water sourced from the Aso mountain range, Zuiyo collaborates with local rice farmers to develop sake rice, producing well-balanced, aromatic sake that has earned recognition in numerous competitions.
The brand name "Zuiyo" originates from a New Year's morning in 1889, when a hawk flew into the brewery. Interpreting it as an auspicious sign, the first-generation president renamed the brand "Zuiyo," meaning "auspicious hawk."
