Japanese Culinary Experience: Edomae Sushi Workshop × Sake Tasting Event

To promote Japanese culinary culture, USE Electronics Co., Ltd. collaborated with the Japan Local Sake Association to support the "Edomae Sushi Workshop × Japanese Sake Tasting" event, jointly organized with SUSHI GARYU and the Taipei sushi restaurant Sushi Kotani.

 

Focusing on the traditional craft of Edomae sushi, the event featured live demonstrations and hands-on experiences guided by professional sushi chefs. Participants explored the layered flavors of Japanese cuisine through sake pairings and learned about the cultural heritage that shapes Japan's diverse food traditions.

Masterclass Demonstrations: Experiencing the Art of Edomae Sushi 

Drawing on culinary wisdom passed down since Japan's Edo period, the workshop opened with an introduction to ingredient preparation and preservation methods foundational to Edomae sushi. Sushi chefs demonstrated classic techniques—including su-jime (vinegar curing), kombu-jime (kelp curing), and simmered toppings—enabling participants to appreciate the depth and history behind each traditional method.

 
In the latter half of the workshop, guests shaped nigiri sushi and rolled kanpyo-maki, experiencing firsthand the precision and craftsmanship involved in authentic sushi-making.

Sake Pairing Experience: Discovering Layers of Flavor

A curated selection of premium Japanese sake was provided by USE Electronics Co., Ltd. for the tasting session. Guided by a certified international sake sommelier, participants explored how aromas, textures, and pairing approaches enhance both sake and food, discovering the depth and elegance of Japanese dining culture.

  • Zuiyo Junmaishu "Saisai" Sousan Amakuchi  Soft acidity and subtle sweetness that harmonize naturally with a wide range of dishes.
  • Tatsuriki Tokubetsu Junmai Yamadanishiki Muroka Namagenshu  Full-bodied and rich, enhancing the flavors of grilled fish and meat dishes.
  • Amanoto Hojun Karakuchi Junmaishu "Junkara"  Clean and crisp profile that highlights the umami of both fish and meat.
  • Sanran Junmai Daiginjo "Yumesasara"  Elegant floral aroma with light acidity, pairing well with delicate dishes and vegetable-based cuisine.
